Scallion Pancake Gyros
It’s hard to go wrong with things wrapped in dough. There are endless variations from different cultures: burritos, bao buns, sandwiches, hot dogs, burgers, donairs, tacos etc. I could go on all day. The result is always a conveniently delicious hand held morsel that encapsulates an assortment of flavors and textures into a single bite. It should be no surprise that we can take flavors from one cuisine and wrap it into a dish from another. Here we have a scallion pancake gyros filled with the ususal suspects and a “tzatziki” made with our scallion ginger oil.
RECIPE

4ea Spring Onion pancakes (I like King of Kings brand from Costco)
Emerald “Tzatziki”
3 tbs Emerald Scallion Ginger oil
6 tbs Plain Greek yogurt
Pinch of salt
Toppings
4 ea chicken thighs (boneless)
Cucumber
Lettuce
Tomato
Red onion
Scarlet
Emerald
INSTRUCTIONS
To make the tzatziki, simply mix emerald with greek yogurt and pinch of salt until thoroughly combined
Marinade 4 chicken thighs with 2 tbs of emerald tzatziki (minimum 1 hr, ideally overnight)
Once marinaded, air fry or grill in oven @200C for 15-20mins, until nicely charred. Slice into 1-2cm strips
Prep your toppings; thinly slice red onion, tomato, cucumber, and cos lettuce
Fry spring onion pancake with a little neutral oil in frying pan until golden brown on both sides
Build the gyros with grilled chicken, sliced veggies, emerald tzatziki, and drizzle with more emerald + scarlet to taste.
Tip - it’s easier to wrap the gyros with baking paper or foil
